I don't try to pair a Pinot with food as the Pinot itself is the treat. Often when I'm trying a wine and someone says, 'Oh you need to try it with this' that is because the food will help mask the flaws in the wine. If a wine can't stand alone it isn't going to get better with food.
Anyway, Pinot's usually are popped young. I think maybe yours were too young though and needed some bottle time. The acidity may have subsided the next day giving them a smoother flavor to you but the fruit also likely dissipated with it. "
